Bio-Oz Buckwheat Rock Cakes (Gluten Free and Dairy free)
With the first wintery days arriving it's time to baking to try this easy recipe - perfect for those cool (or freezing) autumn days.
Ingredients
2 cups Bio-Oz Buckwheat Flour
2 heaped tsp baking powder (GF)
1 level tsp salt
1 1/2 cups sultanas and/ or raisins
2 level tbsp linseeds
2 level tbsp sunflower seeds
1/2 raw sugar
2 eggs
3 tbsp olive oil (extra virgin)
3 tbsp water
Takes 15 minutes prep, 30 minutes cooking time, serves 10-12.
Instructions
Preheat oven to 180C and grease, or line with baking paper, a 26cm x 38cm baking tray.
Combine dry ingredients, seeds and fruit.
Add eggs, water and oil and mix to a stiff dough.
Form approx 10 - 12 large balls and place on greased tray.
Bake approx 1/2 hour until golden, allow to cool on a wire rack.
Enjoy warm or cold.
Store in an airtight container.
The recipe can be doubled.
